I'm not entirely sure this counts as a recipe. I mean, it's just kinda shoving a load of stuff in the oven and then into a pitta bread (I made that sound sexy right?). But it's a lot of good stuff being shoved into that pitta.... Shut up Kate.

So my sister has recently decided she's gone veggie which meant that I did some rearranging of my #tocookbefore24 schedule so I could make my veggie dish before she went back to uni. The article that inspired this series suggested that everyone should know how to cook themselves a vegetarian dish. This isn't too much of a challenge for me as I don't actually see meat as a big part of my diet but I did a bit of hunting around anyway and found this Nigella recipe which is really tasty, easy and healthy. Quite frankly, it just sounds awesome. Butternut halloumi burgers. What a great combination of tastes and words. Serve up with sweet potato wedges and you've got yourself an orange glowing partay.

For butternut halloumi burgers, you will need (serves 4):

1 butternut squash
1 225g block halloumi
1 teaspoon dried oregano
1 tablespoon olive oil
8 pitta breads
Tomatoes, lettuce and sweet chilli sauce, to serve

For the sweet potato wedges:

2 sweet potatoes
2 teaspoon dried rosemary
2 tablespoon olive oil

Pre-heat the oven to 180c. Chop up your sweet potatoes into wedges. Place in a baking tray and drizzle with the olive oil and dried rosemary.

Slice the long part of the butternut (don't you just love that word?) squash into rounds, appox 1-2cm thick. You should get 6-8 slices, if you've got a good sized butternut (I beg your pardon?!)

Drizzle the olive oil over the bottom of a baking tray and lay out your slices of butternut squash in the tray. Sprinkle over the oregano, flipping over the squash so you get both sides of the slices. Roast both the sweet potato wedges and butternut squash for 30-35 minutes. Look at all that orange!

Cut your halloumi cheese into slices and, with 10 minutes to go, place on top of the butternut and leave in the oven to roast for the final 10 minutes.

And you're done! Told you it was easy. Cut one end off the pitta breads, warm through in the microwave and then fill with the burgers, slices of tomato, salad and sweet chilli sauce. Serve with your sweet potato fries and some coleslaw if you so wish.
