Christmas treats #3: Goat's cheese tarts

For a while now, I have been counting down to the 18th December. I have been in desperate need of some time off and the 18th was the start of two beautiful work-free weeks. Of course, the moment I got there, I practically collapsed with tiredness. I'm going to have to go into full-blown hibernation mode for a couple of days if I want to have any kind of energy for Christmas (and, believe me, I do).

As it happens, this week's Christmas treat is perfect for those of you feeling the same as me. It requires minimal effort and only has 3 ingredients. These goat's cheese tarts include two of my favourite things about Christmas food; canapés and CHEESE. If you're a cheese fan like me, then I suggest investing in some decent goat's cheese from a proper cheese shop, rather than your usual supermarket stuff. Plus, you can have a day out at a cheese shop. Treat yourself, it's Christmas. If you're not a cheese fan... well, then why are you making goat's cheese tarts?

For goat's cheese tarts, you will need (make however many you want...):

A log of goat's cheese
Ready rolled puff pastry
Dried rosemary

Pre-heat your oven at 180c. Cut out circles from your puff pastry, size dependant on how big your goat's cheese is. Place on a baking tray, prick in the middle with a fork and cook for 10 minutes.


Once you've taken the pastry out the oven, cut a thick slice of goat's cheese and place on top of each pastry circle.


Sprinkle each tart with dried rosemary.


Cook for 10-15 minutes until the pastry is puffed up and the cheese partially melted.


Seriously drool-worthy. Less than a week until the big day folks!
